Great for the Price
Most folks are likely wondering, how do these compare to costlier options? I have cooked using high-priced non-stick, high-priced stainless steel, ceramic, and “low-stick” anodized stainless steel, in both multi-layer clad bottoms and just multi-ply metal.These honeycomb-style pans are a combination of stainless steel AND non-stick pans. Before this design, they used to make “low-stick” pans, which would use alternative technologies to avoid using Teflon coatings. “Low-stick” pans, in my experience, were still sticky, but you can get scrambled egg protein to stick to Teflon pans, so it’s all really a wash. Eggs are the “litmus” test of pans and for testing a cook’s ability at a glance. You can fry and scramble eggs in stainless with no sticking if the pain is heated and has a layer of fat between the pan and the egg. You just need less fan between the heated pan with Teflon pans, but it’s still needed for both flavor and for science.I don’t like eggs, but my roommate loves them. So, to test this pan, I made them a couple fried eggs and a couple scrambled. Any professional cook or chef will tell you that the secret to cooking eggs in any kind of pan is sufficient oil and movement. Fried eggs are easier than scrambled because the majority of the protein is contained in a hopefully unbroken yolk. Protein is the stuff that wants to stick. Everyone wants to eliminate the fat for health reasons, but it’s simple science. Engines seize without oil in them, and eggs stick without oil around and under them (and sufficient movement, shake that pan to see when the eggs naturally release and thus are ready to flip).This pan felt easier to work with than the little non-stick my roommate uses to make their eggs, which is a cheap, thin non-stick. Nothing stuck, no issues with flipping or scrambling.First time I’ve had to mount a handle to a pan, but it was nice not getting a gigantic box of mostly wasted space. This is not a clad pan, so it likely won’t heat as evenly or hold heat as well as a clad pan, but cladding costs more money than this as well.I love this pan for the price. My personal wish would be that it had cladding, but that’s a preference. It’s wonderfully light to work with. It performed beyond my expectations for this price point. And it was easy to clean, no soaking or scrubbing bits necessary. Just a soap to break down and clean the excess oil in the pan. I would like more of these, and I’m curious how they hold up over time. Teflon, no matter the cost, all seem to flake off eventually.

A really great non-stick pan
Having just literally thrown out a nearly new non-stick pan from a different very big name manufacturer (one that used to be one of the top-rated ones out there, and is now total garbage), I was extremely happy to find how well-made this particular pan was. Enough that I was ready to turn around and buy an 8″ one, and was profoundly disappointed to find the 10″ is the smallest they make.There’s some big benefits, and some potentially big downsides, to this style of non-stick pan — important when considering them. These laser-etched patterns are intended to have the “top” surface of the pan be actual metal — which will carbonize over time — and not the plastic surface of a typical non-stick pan. The idea is to have a surface that metal utensils work safely on, and they do work well for that. These are a bit more proud than some pans I’ve used, which does mean that plastic utensils may not be such a good idea. You’ll literally be grinding off the plastic/nylon as you drag them across the pan. I’d stick to wood or metal.These pans are tri-ply, but as far as I can tell they’re not tri-ply in the sense that it is typically meant. That generally means two layers of stainless with a heavy aluminum core for even heat transfer. These do not appear to have an aluminum core. They’re light, and heat quickly, but do have hotspots. I suppose that shouldn’t be surprising for the price, but don’t confuse their “tri-ply” wording as being the same as tri-clad. It’s not.I was surprised that even eggs work well on the pan for me — something these etched pans often don’t handle well. I don’t know how long that’ll be true for, but doing a one-pan eggs and bacon was no problem with just a bit of olive oil spray.

I’m reviewing the “KOCH SYSTEME CS Stainless Steel Pan, 10 Inch Tri-Ply Stainless Steel Frying Pan with Honeycomb Interior, Hybrid Stainless Skillet, Steel Frying Pan & Stay Cool Handle, Induction Compatible (10 Inch)”First I will state that “non stick” does not mean you don’t need any sort of oil; it means that you don’t need anywhere near the same amount that you would need on a different pan. And you shouldn’t use a spray like Pam on nonstick pans. In many cases, the manufacturers will tell you that it will void their warranty. The handle is comfortable to hold, but the balance isn’t great. For me, it’s ok. The handle is easy to attach and is good quality. I love the flat rim around the top of the pan. All pans should have that! It makes it so much easier to pour liquid out without making a mess. It heats up very fast. I didn’t expect that and I overheated it for my eggs the first time I used it. Another thing that will kill a nonstick pan is high heat. A searing pan is best used for things where you want a high heat. As for as the nonstick coating goes, the first time I used it (for eggs) I used a tiny amount of butter, about 1/4 tsp. It was more than enough. However, since my pan was slightly too hot, there was a slight bit of sticking. I still flipped my over easy eggs without issue, but needed a spatula instead of being able to just flip them in my pan. Since then, I’ve had no issue with anything I’ve cooked. The pan cleans up beautifully, with just a wipe or two. I haven’t used it in the dishwasher yet. I’m not sure the value is quite there, only because I have found a number of pans with performance as good as this one that were less expensive. However, this is much less expensive than the Hex Clad pan of the same size, which it has obviously taken it’s inspiration from. So I’d say the value is ok, just not great. Overall, it seems to be good quality.
