This is like a slightly lighter version of a $170 12-inch Hex-Clad pan
So far, this is a great pan. I was about to buy a Hex-Clad 12″ frying pan on a sale for $150, and then I found this pan on Amazon. This pan is not quite as thick and heavy as my All-Clad 12-inch pan, but for the price on sale, it is a good value.I decided I would try it over getting the Hex-Clad pan, as I could buy three of these for the price of the one Hex-Clad, and this pan shares the raised stainless hex pattern to protect the ceramic coating, which was really what I wanted from the Hex-Clad.This pan is absolutely non-stick, like most brand-new non-stick pans are, but I am hoping the raised honeycomb stainless steel “hex” pattern will keep the coating scratch free as it is supposed to. All my previous non-stick pans developed tiny scratches in the ceramic coating, making them not-so-non-stick over time, and that is supposed to be the advantage of this pan with the raised pattern.It cooks well, my food came out evenly cooked and the chicken was nicely browned. I have done three meals in it now, and all have come out perfect. It cleans up easily being non-stick.

Wow, just wow. As soon as I took this pan out of the nice box that it came in, I was tremendously impressed. If anything can scream quality, this one does. This thing is substantial. There is nothing about it to disappoint. Nothing! We have at least nine frying pans in the house (assuming I didn’t miss a couple) and a few more at our lake house. And I have been around long enough to wear out my share of pans over the years. Most of them were Teflon coated and that stuff wears out. Where does it go? Well, common sense would indicate that some of the “coating” ends up in your food. Not good. Three or four years ago, my wife purchased a 12″ ceramic pan from a name brand that everybody who reads this would recognize. The surface was outstanding and as slick as anything we had ever experienced. However, the manufacturer, for some dumb reason unknown to me, decided that the cooking surface of the pan did not need to be flat. Rather it needed some “slope” from the middle to the edges. That was about as irritating as one could imagine. Put oil in the pan or melt butter in the pan and it immediately runs to the edges. Then I bought another one from yet another easily recognized national brand. Incredible pan that I said many times was the best I had ever owned. But, once again there is some “slope” from the middle of the pan to the edge, just not as much as the first one I mentioned.I saw this pan and it really looked good so I gave it a try. It is “over the top” on the excellent side. From what I have seen and experienced, I would give it a SIX on a scale of one to five. I have used it two days in a row and could not be happier. Flipping a fried egg is touchy as the egg wants to “run away” from the spatula. That’s my way of saying that the cooking surface is as slick as anyone could want. Is there a “slope” in the pan? Look at the attached video of butter melting in the middle of the pan. Notice that it DOES NOT run to the sides of the pan. That was the first concern that I had for this one and it passed with flying colors.I can say after frying for a few minutes that a little bit of heat can be felt at the base of the handle but there was none where my hand touched it when picking it up. The handle is connected to the pan with two pass-through rivets. Have you ever had to tighten a handle on a frying pan because that little screw that attaches to the pan had worked itself loose?. Not here, won’t happen. the base is really nice stainless steel and you can see the quality and the thickness of it. THIS…..THIS is a really nice frying pan. Is the price rather high for the size? Yes, it is. But, in recognition of the quality and the length of the anticipated useful life of this pan, there is nothing wrong with the price. The old adage about getting what you pay for is very true here.

A beautiful replacement for my ancient cast iron skillet!
I was really hooked on my cast iron skillets, I’ve used them almost exclusively for 40 years. But, for the past 15 years I lived on the beach, so properly maintaining them in constant humidity became a challenge. I had a difficult move 4 months ago. To make it easier, I gave away all of my pots, pans and dishes. I still moved to a humid climate, so I decided to replace the cast iron with non-stick pans. Non-stick pans work well, but all of the ones I have bought had some limitations that made me regret giving up my cast iron. Switching to silicone untensils was easier than I thought. But the two biggest problems will ALL of my new non-stick pans were uneven bottoms and loose handles. Anytime I tried to cook anything the oil would always run to the sides of the pan, and the handles always needed constant tightening. I also found cooking steaks in these lighter pans a dreadful task rather than a joy.This Redchef pan impressed me immediately! It is heavy and substantial. Not unwiedly like cast iron, but solid. The bottom is perfectly flat so oil does not run to the sides. The handle is riveted on, so it will not come loose or require constant tightening. And it looks very professional.The first thing I cooked in it was bacon, then a fried egg. It cooked fast, evenly, and did not stick at all. The handle stayed cool the whole time. The next evening I cooked a filet mignon in it. I was in love! I was able to quickly achieve a perfect char, then slide it in the oven to finish it off. I would never be able to do that in my other non-stick pans.I absolutely love cooking in this skillet. I like it better than my old cast iron.
