not truly non stick
the heat does distribute nicely, have a good heavy duty feel to them, but it is not truly nonstick, you still have to use the soft spatulas to be safe not to scratch the coating but things still stick without a good amount of spray/oil/butter eggs stick… i dont use much but i feel bad to not use it b/c i paid so much for it… for sure would not buy again

Not an egg pan replacement
Does not work like a nonstick pan. Sunny side eggs will stick, even with oil usage. You must play around with heat settings to get the right temp so eggs don’t burn. This pan is good if you want to sear meats. It also heats up quite nicely, almost even heat distribution. I have a gas range that I’m using and this pan does well for certain foods.I have tried using metal utensils and it does ok with it, hardly any scratches. Good quality because the pan has a good weight to it, not too heavy but not too light where it’ll slide all over the stove if I need to stir something. Not as easy to clean compared to a nonstick pan, but using a regular dish sponge to scrub is sufficient. The stainless steel parts of the pan does get discolored with frying anything with oil. It is still a pretty pan upon receiving. Would I buy this again to replace my other pans when the time comes? Probably not.

The best hybrid fry pan I’ve found
I bought a couple of different hybrid skillets to test for home use, and this one was the best. All of the hybrid skillets have a raised metal pattern that’s higher than the nonstick surface underneath. The stainless pattern on the Viking seems to be a bit taller than the Hexclad, which seems like it would better protect the nonstick surface. I don’t plan to use metal utensils anyway, but I’m hoping the hybrid pans are more durable than regular nonstick pans.The Viking skillet is beautiful. They put great effort into making the pattern visually appealing. My only critique is that I’d like a matching lid, but Viking doesn’t make one.

Better than hexclad
i have a full set of HexClad, and bough these to go along with my other Viking pans. These are better than HexClad in every way. The evenness of heating, the non stick quality, the handle, and better looking.
